Shrimp Scampi and Parmesan Grits

Who wants an easy and delicious meal that will knock your socks off? Me! This is perfect for a weeknight dinner when you are pressed for time and need to get food on the table quickly. This particular recipe has a Mediterranean twist to the traditional southern dish with the parmesan cheese, lemon and fresh herbs.  The sometimes difficult combination of the creamy texture and fresh taste, is easy to achieve with these few ingredients. This simple, fresh, healthy and delicious meal needs to be a part of everyone’s weekly menu.

Ingredients

Grits

  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 2 cups milk
  • 1/2 cup grits, stoneground white
  • 1/2 cup parmesan cheese, grated
  • salt and pepper to taste

Shrimp

  • 4 tablespoons olive oil
  • 4 garlic cloves, minced
  • 2 lemons, juiced
  • 2 pounds shrimp, peeled and deveined
  • 1/2 Italian parsley bunch, chopped
  • Salt and Pepper to taste

Instructions

Grits

  1. In a large pot, heat the olive oil and saute garlic for 1 minute. Add milk, salt and pepper. Bring to a boil. Gradually stir in the grits. Let it return to a boil. Lower the heat. Cook covered, stirring frequently, for 15-20 minutes. Stir continuously for an additional 10 minutes or until all liquid is absorbed. Stir in cheese. Set aside.

Shrimp

  1. Heat olive oil in a saute pan. Cook garlic for 1-2 minutes. Add shrimp and cook until pink throughout. Add lemon juice, parsley, salt and pepper. Stir until combined.

Assembly

  1. Place a serving of parmesan grits in a shallow soup bowl. Add about a cup of shrimp with juices on top. Finish with a drizzle of good olive oil.
