Roasted Tomatoes with Smoked Olive Oil, Thyme and Garlic

 

 

Your guests will not be expecting the smoky flavor from the olive oil that makes this dish unique. These tomatoes are great as a side dish, served on top of grilled chicken, fish or on salad greens with aged parmesan and fresh basil.

  • Serves: 4 servings
  • Yield: 2 cups

Ingredients

  • 1 pound tomatoes, grape or cherry
  • 3 tablespoons olive oil, smoked
  • 1 tablespoon thyme, fresh
  • 2 garlic cloves, minced
  • salt and pepper to taste

Instructions

  1. Preheat oven to 350 degrees.
  2. Combine all ingredients in a mixing bowl and place on a baking sheet pan. Roast in oven for 20-25 minutes.
  3. Serve with sliced grilled toast and mozzarella or cool it down and serve it on salad greens with shredded parmesan and basil.

    I served this side with roasted chicken, everyone loved it. I found it easy to prepare and had all the ingredients on hand with the exception of the smoked oil olive, which is a story in its self. Three of the most polite, well mannered and well versed young men, who by the way were brothers waited on me at Saporito’s, true customer service. I was surprised Saporito’s carried so many infused olive oils, it’s worth the trip to visit and buy!
