Ingredients
- 1 pound tomatoes, grape or cherry
- 3 tablespoons olive oil, smoked
- 1 tablespoon thyme, fresh
- 2 garlic cloves, minced
- salt and pepper to taste
Instructions
- Preheat oven to 350 degrees.
- Combine all ingredients in a mixing bowl and place on a baking sheet pan. Roast in oven for 20-25 minutes.
- Serve with sliced grilled toast and mozzarella or cool it down and serve it on salad greens with shredded parmesan and basil.

I served this side with roasted chicken, everyone loved it. I found it easy to prepare and had all the ingredients on hand with the exception of the smoked oil olive, which is a story in its self. Three of the most polite, well mannered and well versed young men, who by the way were brothers waited on me at Saporito’s, true customer service. I was surprised Saporito’s carried so many infused olive oils, it’s worth the trip to visit and buy!
