Roasted Sriracha Cauliflower Bites with Stilton Blue Cheese Crema

Ingredients

Crema

  • 1/3 cup Nonfat Sour Cream
  • 2 tablespoons Mayonnaise
  • 2 ounces Stilton Blue Cheese

Cauliflower

  • 1 Whole Head of Cauliflower, cut into Florets
  • 2 tablespoons Butter
  • 1/4 cup Sriarcha
  • 1 tablespoon Lemon Juice
  • 2 tablespoons Olive Oil
  • 1 pinch Kosher Salt and Cracked Black pepper to taste

Instructions

Crema

  1. Combine all ingredients leaving big chunks of cheese still intact. Refrigerate for about 20 minutes.

Cauliflower

  1. Toss cauliflower in olive oil and salt. Roast on baking sheet at 400 degrees for 15 minutes. Mix the rest of the ingredients together in a bowl. Drizzle over cauliflower and toss together. Roast for 5 more minutes. Serve warm with crema.
