Can you smell the fall season around the corner? Football has started, pumpkin spice-flavored everything is out on store shelves and before you know it, fire pits will be in daily use. Sounds like heaven. During this season, the thoughts that go through my head are, “Pumpkin bread, pumpkin spice latte, pumpkin spice doughnuts, pumpkin cupcakes, pumpkin pie…” I just cannot help myself. My pumpkin obsession is real.
Sometimes my kids are a little slow as they eat breakfast in the morning. It can be very frustrating when we only have a few minutes until we need to be out the door, and they are not even close to being done. One breakfast food I make that is guaranteed to be eaten quickly is my pumpkin chocolate chip bread. Within seconds it is gone.
While my boys are not usually granola eaters, I thought I would pumpkin-spice things up a bit by taking their favorite breakfast treat and making it into a healthy granola. Honestly, it tastes just like my pumpkin bread but with a crunchy texture and nuttier flavor. I am not sure this will get us out the door any quicker but at least I know they are eating something healthy, without sacrificing that boost of all the fall feels. So, energize your day and serve this power-packed goodness with milk, over a scoop of vanilla yogurt or as a snack on its own. Oh, and it is perfect for school lunches too. *wink*

Ingredients
- 1/2 cup almonds, sliced
- 1/2 cup walnuts, chopped
- 1/2 cup pecans, chopped
- 2 cups old fashioned oats
- 1/2 cup coconut, shredded
- 1/4 cup cocoa powder
- 2 teaspoons pumpkin spice
- 1 teaspoon vanilla extract
- 1 cup pumpkin puree
- 3 tablespoons maple syrup
- 3 tablespoons coconut oil, melted
- 1/2 cup chocolate chips
Instructions
- Preheat oven to 350 degrees.
- In a large bowl, mix nuts, oats, coconut, cocoa powder.
- In another small bowl, combine the pumpkin puree, vanilla, syrup and oil. whisk until combined and them pour into bowl with dry ingredients. Mix well.
- On a lined sheet tray, spread granola mixture evenly. Bake for 10 minutes. Stir the granola and bake another 10 minutes. Repeat this process 1 more time or until golden brown in color.
- Once cooled, add the chocolate chips, mix and serve or store for later.
