Pimiento Cheeseburger

 

 

Just about every restaurant has their version of a charcuterie board listed on their menus these days. You just cant go wrong with a variety of cheeses, meats, and accompaniments. Pimiento cheese has been following charcuterie’s lead in trending on menus…. and for a good reason. It is super versatile and can go with just about anything. This pimiento cheese burger puts a southern twist and a little finesse to both food trends and it lives up to its expectations. It’s sweet, tangy, smoky and a HUGE mouthful of yummy goodness. The best part is snacking on those extra fried onions that didn’t make it on the burgers! Save the extra pimiento cheese for a dip, make a grilled cheese sandwich, stuff in vegetables, mix it into mac n cheese or with deviled egg filling.  This recipe is no doubt a burger level upgrade!

  • Serves: 3 people
  • Yield: 3 burgers

Ingredients

  • 1/2 pound Applewood smoked bacon
  • 1 Red onion, julienne
  • 1/2 cup All purpose flour
  • 1 quart Oil, canola/vegetable
  • 1 pound Ground beef, 80/20, 1/3 pound patties
  • Salt and black pepper to season burgers
  • 3 Garlic dill pickle, slice, See recipe
  • 1 cup Arugula
  • 3 Beefsteak tomato, slices
  • Blackberry Bourbon BBQ Sauce, drizzle, See recipe
  • 3 Brioche hamburger buns

Pimiento Cheese

  • 2 cups Sharp cheddar, shredded
  • 8 ounces Cream Cheese, softened
  • 4 ounces Pimiento peppers, well drained
  • 2 tablespoons Mayonnaise
  • 1/4 teaspoon Garlic powder
  • 1/4 teaspoon Onion powder
  • 1 tablespoon Sriracha
  • Salt and Pepper to taste

Instructions

Bacon

  1. Preheat the oven to 350 degrees.
  2. Place bacon slices on parchment paper on a cookie sheet and bake for 20 minutes. Remove and let cool.

Onions

  1. Heat oil to a medium heat in a deep frying pan or skillet. Place paper towel on a plate for when the onions are done frying.
  2. Mix flour, salt and black pepper. Coat onion in flour mix and reduce excess before placing in oil. Fry onions until golden brown and place on the dish. Salt them as soon as they came out and let drain.

Pimiento Cheese (Yields 2 cups)

  1. Place all ingredients in a food processor and puree until well combined. Add salt and pepper to taste. If you want more kick, just add more Sriracha.

Burger

  1. Preheat grill to medium heat. Season hamburger patties with salt and pepper. Grill burgers to desired temps. I like mine medium to medium rare or about 7-8 minutes.
  2. On each bun, spread 1/4 cup of pimiento cheese and about 1/3 cup of arugula on the top half of the bun. Then on the bottom half, place the burger, the bacon slice, the pickle slice and the tomato slice. Drizzle a little bit of the bbq sauce on top and close the burger.
