Ingredients
- 8 bacon slices
- 2 tablespoons olive oil
- 1 onion, julienne
- 2 teaspoons herbs de provence
- 1 teaspoon garlic powder
- salt and pepper to taste
- 1 tablespoon balsamic vinegar
- 8 strawberries, sliced
- 2 ounces goat cheese
- 1 ounce arugula
- 8 bread slices, preferably sourdough
Instructions
Bacon
- Preheat oven to 350 degrees. Line a baking sheet with parchment paper. Place bacon slices on paper and bake for 15-20 minutes or until crisp. Set aside.
Caramelized Onion
- Heat olive oil in a saute pan over medium low heat. Add onion and spices and cook for 30-40 minutes, stirring occasionally. Onions should be soft and have a brownish tint to them. Add balsamic and cook for an additional 5-10 minutes. Set aside.
Sandwich Assembly
- Toast bread until golden brown. Spread goat cheese on one slice of each sandwich. Top with arugula and strawberry slices. Cut two slices of bacon in half and place on the other half of the bread slices. Add onions on top and put the sandwich together. Cut on the bias and serve.
