Apple Cider Donut Loaf with Maple Glaze

 

 

“Your house smells too much like cinnamon apples”… said no one ever! I should stock up on these candles and have my house smell like this all year round. It just makes me feel good. It’s the little things in life we should take time to enjoy. There are so many things you can do with apple juice or cider including drinks, sauces, marinades, etc.  The big difference between juice and cider is that the cider is unfiltered with a more luxe apple flavor after pressing the apples. Spiced cider is usually already premixed with spices like nutmeg, cinnamon and cloves. You can also make a hot apple cider by mulling the spices or make a cocktail by adding dark rum or bourbon.

My kids are donut fanatics, and they love this time of year when apple cider donuts hit the grocery stores. I decided not to wait and converted the donuts into a loaf cake with a delicious maple glaze on top having coffee shops wishing they had them to sell in their stores. This thing didn’t stand a chance in my household. It was as good as it looks too. Sure to be a crowd pleaser for a holiday breakfast spread or whenever you are needing your fall fix. The maple, vanilla, cinnamon and apple flavors just belong together. No matter whether its a bundt cake, donut, cupcake or loaf shape cake, when life gives you apples, make cider cake.

Ingredients

Loaf Cake

  • 1 1/2 cups apple cider
  • 1/2 cup sour cream
  • 1 teaspoon vanilla
  • 1 1/4 cups flour
  • 2 tablespoons cornstarch
  • 1 1/4 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 2 eggs
  • 1 cup sugar
  • 8 tablespoons butter, melted

Sugar Mix

  • 1 tablespoon butter
  • pinch of salt
  • 1/4 cup sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg

Maple Glaze

  • 1 1/2 cups Confectioners Sugar
  • 3 tablespoons maple syrup
  • 1/4 teaspoon salt
  • 1 tablespoon heavy cream

Instructions

Loaf Cake

  1. Preheat oven to 325 degrees.
  2. Reduce the apple cider until about 3/4 cup under medium heat. Cool. ***Reserve 1/4 cup.
  3. Mix 1/2 cup of reduced apple cider with sour cream and vanilla. Set aside.
  4. Mix flour, cornstarch, baking powder, baking soda, salt, cinnamon and nutmeg. Set aside.
  5. Whisk 2 eggs and sugar until light and frothy (about 2 minutes). Gradually add melted butter.
  6. Whisk dry in 3 sections alternating with the sour cream mix until no lumps remain. Will be thin.
  7. Place batter in loaf pan and bake for 60 minutes.

Sugar Mix

  1. Melt 1 Tablespoon butter and mix with reserved apple cider. Brush on cooled loaf. Sprinkle the sugar mix all over the cake but especially on the sides.

Maple Glaze

  1. Mix ingredients together.
