1, 2 , 3,…..Go! That is what my mind tells me when the annoying sounds of the morning alarm goes off and my eyes quickly pop open. I usually snooze my brain, squeezing in every last second before I actually put my feet on the ground. How does 6am come around so quickly?! It seems like there are just not enough hours in a day to get everything you need done, including sufficient sleep for a mother who’s brain never shuts off. Whether it is packing a 30 minute run in between work and soccer practice or taking a few more minutes for extra cuddles with my boys before they go to bed, time is like gold for me. This is why I put together simple recipes for weeknight dinners so that my kids can do their homework, take a bath, eat dinner, read some books and get to bed at a descent hour. As you might expect, daylight savings and I are not best friends.
One of my sweet boys has allergies, and we seem to manage it well with a teaspoon a day of local wildflower honey from Straughn’s Farms. We have been doing this for years and I often use their honey in different recipes including desserts, on top of cheese, in dressings, etc. For this recipe, it does not matter what type you use (orange blossom, clover, wildflower, etc.), it will still taste delicious. I love honey for not only its medicinal benefits, but for its floral sweetness. It can even be substituted for sugar, if needed. I decided to use Straughn’s honey in this week’s recipe Honey Garlic Chicken.
Quick tip…lightly coat a measuring cup or spoon with cooking spray before adding honey. It comes right out and there is virtually no mess!
I like to use boneless skinless chicken thighs for this recipe. Boneless, so there is less fuss cutting it a the table and skinless so the dish has less fat. Never been a chicken skin eater. You can use chicken breast if you want something even a little leaner. The sauce has only a few ingredients but has tons of flavor. It is sweet, earthy and you can even add a little cayenne or sriracha for a kick if you want. I choose to omit too much spice if I can help it, otherwise my kids will go through three gallons of milk a week. They make it seem like I am cooking with ghost peppers the minute they detect some sort of heat. The dramatics come out in full force.
Here is the sauce once it is all mixed together.
While searing the chicken in a saute pan, baste the chicken every time you flip it. It takes about 20 minutes total to cook, so if you are in a pinch for time, this is the recipe for you! You can also choose to grill the chicken, rather than pan sear, to add a smoky element to the dish. You can serve it alongside some vegetables, a salad, rice or potatoes. It is such a great recipe that is full in flavor, quick to make and will have you sopping up any remaining juices with whatever you have left on your plate.
P.S. You might want to make extra because one thigh was not even enough for my five year old to eat. That good folks.
