I decided to make a Bacon, Swiss Chard and Sweet Potato Hash (see link attached) and serve it with a sous vide egg. For those that have never experienced a sous vide egg, it is similar to a poached egg but with a more fudgy or custard-like yolk filling. The texture is amazing! You can fry an egg on top and it would be just as good too. This recipe is super easy and delicious! Usually when I eat sweet potato it seems heartier, but I didn’t get that feeling from this recipe because of all the leafy swiss chard in this dish. It also had a bit of a smoky salty flavor from the bacon that played well with the other ingredients. You can never go wrong with a little bacon fat! This recipe is ideal for a brunch, but could also be served as a side dish to a dinner entrée or even on a holiday menu.
I also served this dish with an Avocado Pickled Onion Toast and Tangerine Mimosa. It was refreshing, light and complimented the menu nicely. My guests made sure there weren’t any leftovers with their second helpings and there wasn’t a morsel left on anyone’s plate. It is not only kid approved, but baby approved as well! Isn’t my 1 year old nephew adorable?!
